bonded by blood!

as my whirlwind of escapades continues, i am still at a lack of time to cook very much. with only minutes to whip up lunch for the next few days thought back to an oldie but goody that is both convenient and delicious! i've been making this so long that i don't remember where i discovered the recipe - or any measurements - but it's too simple to matter.

tofu-egg salad

1 block firm tofu (soft is ok too if you prefer)
vegan mayo
yellow mustard
paprika

bust out your tofu and press out the excess water, then crumble into a mixing bowl. mix in a few spoonfuls of mayo till you like the consistency. squeeze in a tablespoon or 2 of mustard, shake shake shake the paprika, mix all together and voila! told you it was easy :)

i like to serve this in a pita with some lettuce, but there about a million variations you could make of this so go nuts. when i made it the other day i only had dijon mustard in the house. expecting it to be bland i used a little more paprika than usual and added some dry mustard. the outcome was actually a little more flavorful than usual, which got me thinking it might be good to add some spicy action next time around. i think i'll mull that over while listing to some exodus!

hi, i'd like to place an order for delivery

this may be hard to believe, but i've been having so much fun in the real world the past couple weeks, that i haven't had much time for the computer! (right after i start a blog - go figure!). since the majority of you out there know what its like not to have time to cook i thought i'd take this opportunity to yap about one of my favorite on-the-go grabs.

bean curd vegetable soup, oh how i love thee! i get this goodness from no. 1 china on 2nd street in queen village. great for cold days, lazy nights, and especially when you have the sniffles. vitality in a plastic tub!

now that you're feeling alive again - go listen to life of agony... as i did, one night, instead of writing to you fine folks. trust me, 2 notes of river runs red and i'll be forgiven :) LIFE OF AGONY

MEATOUT + vernal equinox!

welcome to spring and happy MEATOUT! in honor of this day that celebrates the transition from carnivore to herbivore i thought i'd post helpful hint for beginning veggies, or those who just want to eat something sans meat but don't know what to make. you don't need to bust out something gourmet tofulicious right from the start - just take an old favorite and sub out the dead parts!

i have a bunch of old cook books i keep around for the sake of veganizing recipes. below is one adapted from a book called "mr. food cooks real american"


my family's favorite casserole

1 cup uncooked elbow macaroni
1 package smart ground
1/2 cup sliced celery (about 2 stalks)
1/2 cup diced onion (about 1/2 a small onion)
1 can (28 oz) whole peeled tomatoes, broken up (undrained)
2 tsp karo syrup*
1/4 tsp salt
1/4 tsp pepper

preheat oven to 350°f. cook the pasta until just tender then drain. combine all ingredients in a 2 quart casserole dish and bake, covered, for 30 min. uncover and bake 30 min more, or until top is light golden and crunchy.

*i use karo syrup because i always have it around to make fake blood. agave or other sweetener of your choice would work too.

Viva LaVeganista TAKE 1

once upon a time, i used to send out recipes to friends and the like. i fell off that wagon a long time ago, but i frequently get requests for more. apparently, also years ago, i signed up for a blog site. so the other day my mind was wandering, off whatever task i probably should have been doing, when i thought -- why don't i put recipes up ON a blog site?!

crazy how the mind works.
